RAW VEGAN COOKIES WITH RAW CACAO NIBS/ GALLETAS CRUDIVEGANAS CON CHIPS DE CACAO CRUDO

Lately, I've been drinking a lot of almond milk (one cup everyday after training in the gym). The "problem" about making so many almond milk is that I have lot of almond pulp. I'm a little tired of making so many "rawvegan cheese" with it, so this time I decided to make some cookies, making use of another ingredient I didn't know what to do with it: mesquite.

Mesquite is a leguminous plant. I use the flour mesquite, which is very sweet.

So these cookies only have this two ingredients: almond pulp and mesquite. If you want a sweetener cookies you just have to add some agave nectar.


Delicious rawvegan cookies.


Ingredients:

-Almond pulp (the result of making almond milk -two cups of almonds, before soaked, and near two liters of water-)
-1 cup mesquite
-1 tbsp agave nectar (if needed)
-raw cacao nibs
*I would add pieces of hazelnuts




To make cookies just mix almond pulp with mesquite flour. I did it with my hands. Then add agave nectar, if needed and finally, raw cacao nibs.

Make the cookies and pour them on dehydrator sheet and dehydrate at 105º F (42ºC) for 8 hours.

Don't you think this is a nice present?
